Broccoli Stalk Pancakes

Ever wonder what to do with the stalks when you make steamed broccoli for dinner? My family won’t eat the stalks, so I put them to good use with this recipe. The pancakes have a taste reminiscent of potato pancakes. I think they taste amazing, but the rest of my family is completely put off by the idea, so I don’t have to share! You can also make these with zucchini or leftover spaghetti squash. Actually my older daughter likes the spaghetti squash pancakes quite well.
Broccoli Stalk Pancakes:
2 large or 3 small stalks broccoli, peeled & shredded (or 1.5# grated & drained zucchini or 2 C cooked spaghetti squash)
1/4 C chopped onion
2 eggs
2 T flax seed meal
6 pecan halves, chopped (1/4 oz)
1/4 tsp salt
Toppings of your choice (optional): sliced bananas, applesauce, maple syrup, blueberries, etc.
Preheat a skillet over med-low heat & add cooking fat of your choice
Add 2 eggs to large bowl & lightly beat
Add all ingredients to bowl. I peeled & shredded the broccoli stalks last night when I made dinner so that my husband would clean the food processor. 🙂
Arrange in a large skillet in 4 mounds.
Cook until golden brown on both sides.
I decided to sauté banana slices for a topping. (Yes I do have quite a collection of cast iron skillets!)
The finished product served with sausage from a local farm. Very tasty and filling.
