Cheesy Eggs

I was tired and cold and grumpy this morning. I had been planning to make another frittata, but I wasn’t that motivated. Then I remembered a breakfast dish I hadn’t made in awhile – cheesy eggs. This is a variation on the Mock Danish recipe, which can be made sweet or savory.

4 oz Neufchâtel cheese
2 eggs
1 oz crumbled or grated cheese (I used feta)

Place Neufchâtel cheese in a covered casserole dish and microwave on 50% power for one minute to soften the cheese (I almost said microwave-safe casserole dish, but I’m not one to insult my readers’ intelligence).

Add remaining ingredients and mix with a fork.

Microwave on full power for 4 min or until the middle sets. Serves 2.

Comments: The challenge was to eat out at every meal, preferably at new places to me, and try to stay Primal at every meal. Going out for breakfast and lunch is impractical (and actually undesirable) for me on a workday. Tom and I are going out to dinner this weekend, so maybe I can try this then.

Who did you talk to: a coworker who expressed interest in learning more about the Primal diet
Hardest part: Not sure I’ve seen a direct benefit for myself from the diet. Since I’ve already lost the weight it’s hard to measure tangible results.
Best part: getting the opportunity to help someone improve her health
Comments: I have been spreading the word already at work, with my family, with a close friend, my Facebook friends and through this blog. I’m not trying to convert anyone to Paleo. What I would like people to discover is how delicious a whole food diet can be, and that is is doable with our modern lifestyles. Jewel flipped through the Primal Blueprint Reader Created Cookbook, and she said that so many of the recipes sounded good to her. She said she’d try anything except the spicy recipes! So stay tuned next week when we’ll try Paleo shepherd’s pie.

Life Without Oatmeal

Yesterday (today as well, for that matter) was a gloomy day that just cried for a steaming bowl of steel-cut oats. Since I have pledged to go grain-free in January, I searched the web for alternatives. I decided to try Oatless Oatmeal. It was amazingly good – like a bowl of banana nut bread! Daughter #1 ate a bowl of it as well and gave it a thumbs up. We both prefer oatmeal with peanut butter mixed in, and this had a similar but richer flavor.

I made 2 extra batches of the nuts and seed mixture that I am storing in the freezer so I can save a step next time.

The recipe didn’t say how many servings it made, so I divided it into 3 bowls. I added 2T whey protein powder to my serving and found it very filling. Jewel added a packet of Splenda to hers.

I didn’t feel like making a B.A. Salad for lunch, so I had this instead:

I wrapped prosciutto around slices of fresh mozzarella cheese and avocado. Daughter #1 requested this for lunch today.

Intuitive Meals
Hardest Part: I really do prefer traditional food at structured meal times. Also, I have a family to consider so I can’t just eat randomly throughout the day.
Best Part: I had a glass of draft beer when I went out with friends.
Comments: I was very pleased with my breakfast and lunch choices.

Grand Play Outing
Comments: aborted due to weather and my unrelenting back pain. Unable to reschedule for today for the same reasons. We are planning to try again next Sunday.
